In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper.
Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes (or up to 24 hours for best flavor).
Heat a skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side, or until cooked through.
Remove the chicken from the skillet and set aside.
In the same skillet, add chicken broth and Kalamata olives. Simmer for 3-4 minutes, allowing the flavors to meld.
Return the chicken to the skillet, spooning the sauce over it.
Sprinkle crumbled feta cheese on top and garnish with fresh parsley.
